Adriana's Bruschetta

 

This blog post comes from Adriana, Gigi’s sous chef extraordinaire. One day, she invented this bruschetta yumminess. Creative. Like her mother. Super easy, tasty, healthy and versatile. The secrets? Gigi’s Organics Adobo with Pepper + balsamic vinegar. Eat up!

Ingredients (all organic):

Tomatoes

Garlic cloves

Fresh Basil

Balsamic Vinegar

Extra Virgin Olive Oil

Gigi’s Organics Adobo with Pepper

Ciabatta baguette

Option:

Marinated fresh mozzarella balls

Directions:

Chop the tomatoes in small cubes.

Finely chop the garlic cloves.

Rough chop the fresh basil.

Add tomatoes, garlic and basil into large bowl.

If using mozzarella balls, cut mozzarella into small pieces and toss with tomato mixture. Incorporate mozzarella ball seasonings and oil into tomato mixture for more flavor!

Add 2/3 olive oil to 1/3 balsamic vinegar. If you’ve added the oil from the mozzarella balls, reduce the amount of olive oil to balsamic ratio to no more than 50/50. Add Gigi’s Organics Adobo with Pepper. Mix well and taste. Adjust balsamic and Adobo with Pepper to taste.

Set this mixture aside. You can make this ahead of time and use for days!

Pro Tip: Toss tomato mixture with hot pasta for a quick, delicious meal.

Toast slices of ciabatta baguette.

Once ciabatta toasted, smear seasoned balsamic oil onto toast. Then add tomato mixture on top. Enjoy!
